Unicorn Poop

  
What is better for a little girls (almost) birthday celebration at school than unicorn poop cookies? Not much! Sparkles, sprinkles, tie dye. Talk about a throw back to Lisa Frank, it was like my middle school trapper keeper threw up in my kitchen! I realize I may have just dated myself with that comment… 

These cookies are not as hard to make as the look. We’ve discussed my lack of Betty Crocker baking skills on here many times before. If I can do these, you can do these. 

The most important step that may get skipped is chilling the dough. Don’t skip this part. If you don’t chill the dough it will be sticky and your colors will run together when you roll the dough. Risking the chance of the cookies just looking like poo and not the unicorn kind…

Any sugar cookie dough will work. I’ve included the tasty recipe I used. This recipe is also doubled. With Emma taking cookies to class and our families cookie/cookie dough addiction I made mass quantities to err to the side of caution. With no further ramblings here is the recipe so you can have your own unicorn poop! 

Unicorn Poop Cookies 

Sugar Cookies

  • 3 1/2 sticks butter
  • 3 Cups granulated sugar

Cream until light and fluffy. Mix in: 

  • 4 large eggs, room temperature 
  • 4 teaspoons vanilla extract 

In a separate bowl combine the following: 

  • 5 cups flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt

Slowly add dry ingredients to the butter mixture. Mix until well combined.

The start of our adventure.

Next comes the food coloring. Gel food coloring works the best for vibrant colors with some pop. Divide your dough in to equal portions. Same number of portions as colors you’re using. I had 5. Combine the desired amount of coloring and dough to get the shade you want. Be careful to clean bowl/utensils so you don’t mix your colors.  

Wrap in plastic wrap and chill the dough for at least an hour. DO NOT skip this step! Let me repeat chill the dough. 

Once your dough is chilled cut in to strips. Stack the strips in a pile. Gently roll in to a large log. Think way back to your play dough days. Making these cookies is kind of like using yummy, edible play dough. 

Be sure to lightly flour your rolling surface. This dough can get sticky! Don’t worry about flour on the outside of the dough. When the cookies are baked it will go away.

  

Once my dough was in a large log, I sectioned it off a few inches at a time. If you roll the dough too much your colors combine. Then just make “snakes”.  

 
When your dough is down to about a quarter inch in fatness, begin to curl it in a circle. I made my cookies about 1-1 1/2 inches in diameter.  

  
 Bake the cookies on an untreated baking sheet in a 350 degree oven for 8-10 minutes. Be careful not to over bake. Let cookies set a few minutes before moving them to cool.  

 
Once cookies are completely cooled, decorate! Now we all know unicorns poo sparkles and glitter….  

 
This is edible sparkle gel icing. 1 tube of this was plenty to decorate with. Simply squeeze a small amount in to a bowl. Using a paint brush apply a thin layer of sparkles to the top of the cookie.  

 
While the gel is still sticky top with sprinkles. The brighter the colors the better! This is unicorn poo after all.  

 
Enjoy your bright and colorful cookies with an ice cold glass of milk or a warm cup of coffee!
