I originally found this recipe on Pinterest and thought it looked amazing. Then I read the comments section. They were not so hot. Sticky, burnt pancakes. Pancakes that didn’t flip. The critique was endless. So after thinking for a few seconds I decided to not use the pancake recipe that was listed on the blog post. I had great results.
You need a very fluffy pancake for this to turn out right. I have a delicious homemade recipe, but I didn’t think they had enough fluff to pull the job off. So I fell back on the tried but true Bisquick mix. Perfection. If you have a good and fluffy home made recipe use it, but it needs some poof. You do dirty a few extra pans in the process but so worth it. Any time I can eat cream cheese frosting for breakfast, or well any meal, I’m game!
Cinnamon Roll Pancakes
~ Pancake Batter ~
- 2 Cups Bisquick baking mix
- 1 Cup of Milk
- 1 Egg
Stir until all ingredients are combined. Let sit and rest while you make the good stuff.
~ Cinnamon Swirl~
- 4 Tablespoons (1/2 stick) Unsalted Butter, melted
- 1/3 Cup Light Brown Sugar
- 1/2 Tablespoon Cinnamon
Mix ingredients together in a small bowl until combined. Set aside.
~Cream Cheese Frosting/Glaze ~
- 4 Tablespoon (1/2 stick) Unsalted Butter
- 2 Ounces Cream Cheese, at room temperature
- 3/4 Cup Powdered Sugar
- 1/2 Teaspoon Vanilla Extract
Melt butter and cream cheese in a small sauce pan. This step makes it look clotted and nasty. Don’t fear. I was mildly discouraged at this point. Take off heat, mix in powdered sugar and vanilla, all is well!
Keep the cinnamon sugar mixture and glaze warm. Here we go!
Grease a griddle, I prefer cast iron for even heat, drop apprx 1/4 cup of pancake batter on to griddle. Cook until little bubbles come to surface. Drizzle cinnamon mixture in cute swirls on top. The original recipe recommended use of a pastry bag. I’m not that much of a Suzy Home Maker, to each their own. Flip over and cook an additional 30 seconds or so. Remove from griddle. CLEAN the griddle with a wet towel and regrease in between batches. DO NOT SKIP THIS STEP!!! When you do the cakes get black and burn from the sugar left over on the griddle. Once all cakes are cooked, this recipe makes 10-12, drizzle or smear with the warm glaze and serve.
These are to die for. Seriously. Make them.
